Green Peas Flan Majoram Scented

Suggested pairing with Gjulia Beer East - Weizen

Ingredients for 8 servings

  • 600 gr. Green peas
  • 150 gr. Fresh cream
  • 3 eggs
  • 2 spoons grated Parmesan cheese
  • Marjoram, half lemon juice, pine nuts, garlic, olive oil, salt, pepper
  • Trevisan chicory for decoration

Stew the green peas together with the masse garlic (do not peel it), in a pan with boiling water for 15 minutes, drain them, take the garlic away.
Let it cool down then use the blender to purée the green peas together with the eggs, cream ,grated cheese, marjoram, salt and pepper. Spread butter over a round pan (20 cm diam.) then fill with peas purée.
Bake it in water bath at a 180° for approx. 45 minutes, check the results with a tooth pick.
Roast the pine nuts. Prepare a sauce with lemon juice, a few spoons of olive oil and salt.
When the flan is done, remove it carefully from pan and slice it.
Decorate each slice with the roasted pine nuts and some leaves of trevisan chicory (red and green) and the citronette sauce.
