Turkey roll

Suggested pairing with Gjulia Beer İOİ Gluten Free

Ingredienti per 6 persone

  • 6 turkey breast filet of 170 gr. each
  • 200 gr. ham
  • 1 spoon pistaches
  • rosemary
  • dry white wine (eventually blond ale instead)
  • red chicory
  • salt, pepper

ace the turkey filets between two wax papers , lightly pound meat until even. Chop the pistachios, the ham then add the pistachios blending them, add some olive oil to obtain a light creamy stuffing. Add salt to the turkey filets, pour the stuffing and roll up. Spread some oil and the chopped rosemary onto a wax paper, blend it by hand and pass the turkey rolls over it to cover them properly with the oil and rosemary. Use a toothpick to hold them in place.
Heat a pan and once hot place the meat rolls, make them brown and add the glass of wine, let it evaporate then cook for about 20 minutes . If necessary add some hot water. Once cooked, remove the toothpicks, slice the rolls diagonally and place the slices on a plate over red chicory leaves and spread the remaining sauce on top.
