Veggie Ragout & Pasta

Suggested pairing with Gjulia Beer North - Pils

Ingredients for 6 servings

  • 480 gr. Linguini pasta
  • 1 large onion
  • 2 carrots
  • 1 stick celery
  • 80 gr. raisins
  • 50 gr. olives
  • 25 gr. Salted capers
  • 400 gr. Tomato sauce (average)
  • ½ glass white or red wine
  • parsley, basil, salt, pepper

Wash and clean the vegetables then chop them finely. Stir the vegetable in few olive oil.
Rinse the capers from salt and mince it together with olives and raisins.
Combine to the vegetables and slowly stir, then add the wine and the tomato sauce adding a spoon of water. Add the minced parsley and basil.
Cook at low heat for approx. one hour.
Cook separately the linguini then top with the ragout.
