Zingy chicken couscous

Suggested pairing with Gjulia Beer IPA

Ingredienti per 6 persone

  • 300 g couscous
  • 500 g chicken breast
  • 3 sweet red peppers
  • fresh ginger (about the size of 4 walnuts)
  • parsley
  • salt
  • extra-virgin olive oil

Prepare your couscous as indicated on the label.
Boil chicken breasts into vegetable stock for about 30 minutes, strain and let it cool, then dice it.
Put 2 peppers, peeled ginger and parsley in your mixer then chop it, add just enough oil to get a smooth sauce, then add salt to taste.
In a bowl, season chicken cubes with the pepper sauce, then let it stand at room temperature for some hours.
Slice the remaining pepper.

Serving tip: arrange your couscous on a dish, then put diced chicken in the middle. Decorate with pepper slices and chopped parsley.
